Hasselback Potatoes Recipe

These good-looking potatoes are definitely way easier to make than they look! With crispy skins and a tender interior, they are flavored with fragrant garlic and fresh parsley and drizzled in Pleasant Valley Extra Virgin Olive Oil and make a great appetizer or side that will surely impress anyone!

Ingredients:

  • 4 small /medium sized potatoes
  • 4 cloves of garlic, sliced
  • 1 red onion, sliced 
  • Pleasant Valley Extra Virgin Olive oil
  • Salt and pepper

Preparation:
1. Preheat oven to 200 °celsius (390 ° F)
2. Wash and dry potatoes.
3. Place each potato into a serving spoon. Hold it in place while you slice the potato thinly. The spoon will stop the knife cutting right through the potato.
4. Fan the potato out and place a slice of garlic in each slot.
5. Place the onion in the base of a baking tray.
6. Sit the potatoes on top of the red onion. Season with salt and pepper. Drizzle with oil, ensuring oil enters the inner parts of the potatoes.
7. Bake for one hour, stopping half way to take the oil from the bottom of the baking tray and drizzle over the potatoes again.
