PV Farms Creation: Flavorful Pesto Recipe

With the beginning of fall upon us, Now is a great time to harvest basil for fresh, flavorful pesto! It's fantastic tossed with any pasta or used as a spread on sandwiches. Marinate or toss with your veggies or use it as a sauce topping for meat. We love this simple recipe that only takes a few minutes in a food processor or blender.
Ingredients:
- Pleasant Valley Extra Virgin Olive Oil - 1/4 cup
- Fresh basil leaves - 100 grams
- Soaked Pine Nuts - 1/4 cup (Soak for 15 mins in warm water before blending) Don't have pine nuts on hand? Try it with raw walnuts instead!
- Red chili flakes- 1tsp
- Salt to taste
- Black pepper- 1/4 tsp
- Juice of 1 Lemon
- Garlic -2 small cloves
- Parmesan cheese - 1/2 cup, freshly grated
Preparation: (20 minutes)
- Grate Parmesan cheese and set it aside.
- In a food processor, add any nuts of your choice and blend them. Once the texture is coarse, add basil leaves, garlic, seasonings and Parmesan cheese.
- Blend whilst adding Pleasant Valley Extra Virgin Olive Oil to create an emulsion - which gives you the creamiest Pesto sauce!
- Pesto sauce is ready to use!
Pesto sauce can last for 7 days in the refrigerator.
